Our Yabukita matcha is exclusively sourced from a 4th-generation family tea farm run by Takashi and Teruko, who specialize intimately in tencha tea leaf cultivation and matcha powder production. By partnering directly with their family, we ensure a product that is 100% JAS Organic certified, grown with profound respect for the soil and entirely free of chemical additives or synthetic fertilizers.
Identified in Shizuoka in 1908 by Sugiyama Hikosaburo and officially registered in 1953, the Yabukita cultivar is the quintessential cornerstone of Japanese tea. Comprising approximately 75% of Japan's tea fields, it serves as the ultimate benchmark against which all other cultivars are measured for both harvest timing and flavor profile.
Because of its organic cultivation, this Yabukita expresses a uniquely robust and earthy character compared to conventional varieties. It delivers a beautifully balanced profile: a vibrant, fresh grassy aroma, a sturdy umami foundation, and a crisp, pleasant astringency that allows its flavor to shine through effortlessly, even when paired with milk.
